Description

Decadent Sugar Cookie Cheesecake to Sweeten Your Day.

Ingredients

Scale
  • 2 cups all-purpose flour (substitute with gluten-free flour if needed)
  • 1/2 cup unsalted butter (softened for easy mixing)
  • 3/4 cup granulated sugar (can substitute with coconut sugar)
  • 1 large egg (can use flax egg as vegan substitute)
  • 1 teaspoon vanilla extract (use pure vanilla for best quality)
  • 1 teaspoon baking powder (ensure it’s fresh for effective leavening)
  • 1/4 teaspoon salt (reduce if using salted butter)
  • 16 oz cream cheese (softened to prevent lumps)
  • 1/2 cup sour cream (optional, can use Greek yogurt as substitute)
  • 1 cup whipped cream (optional topping)
  • 1 cup sugar sprinkles (for festive presentation)
  • 1 cup fresh berries (great for a decorative finish)

Instructions

  1. Preheat your oven to 350°F (175°C). Gather all ingredients and lightly grease a 9-inch springform pan.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture to form a dough. Press into the bottom of the prepared pan and bake for 10-12 minutes until lightly golden. Allow the crust to cool slightly.
  6. Beat the softened cream cheese in a large bowl until smooth. Gradually incorporate sugar and vanilla extract. Add eggs one at a time, mixing on low speed to maintain smooth consistency.
  7. Gently stir in sour cream and a small amount of flour until well mixed.
  8. Pour the cheesecake filling over the cooled crust, smoothing the top. Tap the pan on the countertop to minimize air bubbles.
  9. Reduce oven temperature to 325°F (163°C) and bake for 40-50 minutes until edges are set, but center jiggles slightly.
  10. Once baked, cool at room temperature for about 30 minutes, then cover with plastic wrap and refrigerate for at least 3-4 hours, preferably overnight.
  11. Remove from the pan and garnish with whipped cream, sugar sprinkles, and fresh berries before serving.

Notes

  • Chill cream cheese before mixing to avoid lumps.
  • Avoid overmixing to prevent cracks.
  • Serve with fresh toppings for the best flavor.
