Description
Decadent Sugar Cookie Cheesecake to Sweeten Your Day.
Ingredients
Scale
- 2 cups all-purpose flour (substitute with gluten-free flour if needed)
- 1/2 cup unsalted butter (softened for easy mixing)
- 3/4 cup granulated sugar (can substitute with coconut sugar)
- 1 large egg (can use flax egg as vegan substitute)
- 1 teaspoon vanilla extract (use pure vanilla for best quality)
- 1 teaspoon baking powder (ensure it’s fresh for effective leavening)
- 1/4 teaspoon salt (reduce if using salted butter)
- 16 oz cream cheese (softened to prevent lumps)
- 1/2 cup sour cream (optional, can use Greek yogurt as substitute)
- 1 cup whipped cream (optional topping)
- 1 cup sugar sprinkles (for festive presentation)
- 1 cup fresh berries (great for a decorative finish)
Instructions
- Preheat your oven to 350°F (175°C). Gather all ingredients and lightly grease a 9-inch springform pan.
- In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet mixture to form a dough. Press into the bottom of the prepared pan and bake for 10-12 minutes until lightly golden. Allow the crust to cool slightly.
- Beat the softened cream cheese in a large bowl until smooth. Gradually incorporate sugar and vanilla extract. Add eggs one at a time, mixing on low speed to maintain smooth consistency.
- Gently stir in sour cream and a small amount of flour until well mixed.
- Pour the cheesecake filling over the cooled crust, smoothing the top. Tap the pan on the countertop to minimize air bubbles.
- Reduce oven temperature to 325°F (163°C) and bake for 40-50 minutes until edges are set, but center jiggles slightly.
- Once baked, cool at room temperature for about 30 minutes, then cover with plastic wrap and refrigerate for at least 3-4 hours, preferably overnight.
- Remove from the pan and garnish with whipped cream, sugar sprinkles, and fresh berries before serving.
Notes
- Chill cream cheese before mixing to avoid lumps.
- Avoid overmixing to prevent cracks.
- Serve with fresh toppings for the best flavor.
