- 4 cups chopped green tomatoes
- 1 large onion, finely chopped
- 1 cup sugar
- 1/2 cup apple cider vinegar
- 1/2 cup water
- 2 teaspoons mustard seeds
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 red bell pepper, finely chopped (optional)
Instructions
- Combine chopped green tomatoes, onion, and red bell pepper (if using) in a large saucepan.
- Add sugar, apple cider vinegar, water, mustard seeds, cinnamon, cloves, turmeric, salt, and black pepper. Stir well.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Reduce heat and simmer for 45 minutes to 1 hour, stirring occasionally, until the relish thickens.
- Remove from heat, let cool slightly, and transfer to sterilized jars.
- Seal the jars. For longer storage, process in a hot water bath for 10 minutes.
Notes
- This relish can be stored in a cool, dark place for up to 12 months if sealed properly.
- After opening, store in the refrigerator and consume within 2-3 weeks.
- Can be enjoyed at room temperature or gently reheated.
