Description

This recipe offers a delightful way to preserve unripe tomatoes, creating a unique sweet and tangy relish perfect for various dishes.


Ingredients

  • 4 cups chopped green tomatoes
  • 1 large onion, finely chopped
  • 1 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 2 teaspoons mustard seeds
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper, finely chopped (optional)

Instructions

  1. Combine chopped green tomatoes, onion, and red bell pepper (if using) in a large saucepan.
  2. Add sugar, apple cider vinegar, water, mustard seeds, cinnamon, cloves, turmeric, salt, and black pepper. Stir well.
  3. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  4. Reduce heat and simmer for 45 minutes to 1 hour, stirring occasionally, until the relish thickens.
  5. Remove from heat, let cool slightly, and transfer to sterilized jars.
  6. Seal the jars. For longer storage, process in a hot water bath for 10 minutes.

Notes

  • This relish can be stored in a cool, dark place for up to 12 months if sealed properly.
  • After opening, store in the refrigerator and consume within 2-3 weeks.
