Description

These vanilla waffle cookies are delicately crispy on the outside with a soft interior. They are cooked in a waffle iron, eliminating the need for an oven.


Ingredients

  • ½ cup (1 stick) salted butter (softened)
  • ½ cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • Melted butter or non-stick spray
  • Powdered sugar (for dusting)

Instructions

  1. In a large mixing bowl, beat the softened butter, light brown sugar, and granulated sugar with a hand mixer until combined.
  2. Add the eggs and continue to beat until the mixture is fluffy.
  3. Stir in the vanilla extract, half of the all-purpose flour, the baking powder, and the baking soda. Mix until well combined. Add the remaining flour and mix until fully incorporated to form your vanilla waffle cookie dough.
  4. Heat your waffle maker.
  5. Brush the waffle maker with melted butter or spray with non-stick spray. Scoop the vanilla waffle cookie dough, using a medium size cookie scoop, and place it in the middle of the waffle iron. Cook for 3 minutes. (If you are using a large waffle iron, you can cook 3, possibly 4, vanilla waffle cookies at a time.)
  6. Once the vanilla waffle cookie is cooked, it will still be soft. Use two forks to carefully move the cookie to a cooling rack. Repeat this process until you have used all the dough to make your homemade vanilla waffle cookies.
  7. Sprinkle the finished vanilla waffle cookies with powdered sugar and enjoy these sweet vanilla waffle cookies.

Notes

  • The cookies will be soft right after cooking; they firm up as they cool.
  • Adjust cooking time slightly based on your waffle iron for perfectly crispy vanilla waffle cookies.
