  • 2 tablespoons Olive Oil
  • Flour or Semolina (for dusting)
  • 1 cup Marinara or Pizza Sauce
  • 2 cloves Garlic (minced)

Instructions

  1. Preheat your wood oven to 500–550°F (260–290°C), waiting for flames to settle into steady heat.
  2. On a lightly floured surface, roll each of the four dough balls into 8–9 inch circles.
  3. In a mixing bowl, combine ricotta cheese, mozzarella, Parmesan, minced garlic, and Italian seasoning until well mixed.
  4. Spread 2–3 tablespoons of marinara or pizza sauce onto one half of each dough circle, then add the cheese mixture and optional fillings.
  5. Fold the dough over to create a half-moon shape and crimp the edges tightly to seal.
  6. Dust a pizza peel with flour or semolina, place calzones onto it, and carefully transfer them into the wood-fired oven.
  7. Bake for about 6–8 minutes, rotating halfway through, until golden-brown and puffed.
  8. Once out of the oven, brush the wood-fired calzones lightly with olive oil.
  9. Allow them to cool slightly before slicing and serving with warm marinara for dipping.
