- Optional Fillings (pepperoni, cooked sausage, sautéed mushrooms, spinach, or olives)
- 2 tablespoons Olive Oil
- Flour or Semolina (for dusting)
- 1 cup Marinara or Pizza Sauce
- 2 cloves Garlic (minced)
Instructions
- Preheat your wood oven to 500–550°F (260–290°C), waiting for flames to settle into steady heat.
- On a lightly floured surface, roll each of the four dough balls into 8–9 inch circles.
- In a mixing bowl, combine ricotta cheese, mozzarella, Parmesan, minced garlic, and Italian seasoning until well mixed.
- Spread 2–3 tablespoons of marinara or pizza sauce onto one half of each dough circle, then add the cheese mixture and optional fillings.
- Fold the dough over to create a half-moon shape and crimp the edges tightly to seal.
- Dust a pizza peel with flour or semolina, place calzones onto it, and carefully transfer them into the wood-fired oven.
- Bake for about 6–8 minutes, rotating halfway through, until golden-brown and puffed.
- Once out of the oven, brush the wood-fired calzones lightly with olive oil.
- Allow them to cool slightly before slicing and serving with warm marinara for dipping.

- Unbaked calzones can be frozen for up to 3 months, baked directly from frozen.
- For allergy concerns, substitute cheeses with plant-based alternatives and use gluten-free pizza dough if needed.
