- 5–6 small Zucchini
- 1/2 teaspoon Salt
- 1 spray Cooking Spray
- 6 Eggs
- 1–2 tablespoons Parmesan Cheese
- 1 teaspoon Pepper
Instructions
- Spiralize 5-6 small zucchinis into noodle shapes. Place them in a strainer and sprinkle with 1/2 teaspoon of salt. Let sit to draw out excess moisture while you preheat your oven to 400°F (204°C).
- Wrap the salted zoodles in paper towels or cheesecloth and gently squeeze to remove as much excess water as possible.
- Lightly spray a baking sheet with cooking spray. Shape the drained zoodles into six nests on the baking sheet, creating small wells in the center of each.
- Crack one egg into the center of each zoodle nest. Sprinkle with the remaining salt, pepper, and Parmesan cheese.
- Bake in the preheated oven for 6-8 minutes, or until the eggs are set but still slightly undercooked in the center.
- Remove from the oven, let cool for a minute, and serve warm, garnished with fresh herbs if desired.
