Description

Create delightful Zoodle Egg Nests for a wholesome and satisfying breakfast. These low-carb, gluten-free nests feature tender zucchini noodles cradling perfectly baked eggs, offering a delicious and healthy start to your day.


Ingredients

Scale
  • 56 small Zucchini
  • 1/2 teaspoon Salt
  • 1 spray Cooking Spray
  • 6 Eggs
  • 12 tablespoons Parmesan Cheese
  • 1 teaspoon Pepper

Instructions

  1. Spiralize 5-6 small zucchinis into noodle shapes. Place them in a strainer and sprinkle with 1/2 teaspoon of salt. Let sit to draw out excess moisture while you preheat your oven to 400°F (204°C).
  2. Wrap the salted zoodles in paper towels or cheesecloth and gently squeeze to remove as much excess water as possible.
  3. Lightly spray a baking sheet with cooking spray. Shape the drained zoodles into six nests on the baking sheet, creating small wells in the center of each.
  4. Crack one egg into the center of each zoodle nest. Sprinkle with the remaining salt, pepper, and Parmesan cheese.
  5. Bake in the preheated oven for 6-8 minutes, or until the eggs are set but still slightly undercooked in the center.
  6. Remove from the oven, let cool for a minute, and serve warm, garnished with fresh herbs if desired.
