Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh corn kernels (about 2 ears)
  • 1/2 cup mayonnaise
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp chili powder
  • 1/2 cup crumbled Cotija cheese
  • 1/4 cup chopped cilantro
  • 1/2 cup full-fat sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season chicken breasts generously with salt, pepper, and chili powder.
  3. Grill chicken for 6-7 minutes on each side until it reaches an internal temperature of 165°F (75°C). Let it rest before slicing.
  4. While the chicken grills, combine corn kernels, mayonnaise, lime juice, chili powder, and half of the Cotija cheese in a bowl. Mix well.
  5. Slice the rested chicken and layer it in serving bowls.
  6. Top the chicken with the corn mixture.
  7. Finish with the remaining Cotija cheese, chopped cilantro, and an extra squeeze of lime if desired.
