Description

Experience a Loaded Seafood Baked Potato, a decadent dish featuring fluffy baked potatoes generously filled with a creamy mixture of shrimp, crab, cheese, bacon, and green onions.


Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • Coarse sea salt
  • 1/2 lb cooked shrimp, peeled and chopped
  • 1/2 lb lump crab meat
  • 4 strips bacon, cooked crispy and crumbled
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • Squeeze of lemon juice
  • 1/2 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup cream cheese, softened
  • 2 green onions, sliced thin
  • Fresh chives, chopped
  • Salt and pepper to taste
  • Optional: hot sauce

Instructions

  1. Preheat oven to 425°F. Scrub potatoes clean, pat dry, poke with a fork, rub with olive oil and coarse salt. Bake for 45-60 minutes until tender.
  2. While potatoes bake, cook bacon until crispy and crumble. Melt butter in a pan, sauté garlic for 30 seconds. Add shrimp, crab, white wine, and lemon juice. Cook for 2-3 minutes until warmed through. Season with salt and pepper.
  3. Cut baked potatoes open lengthwise and scoop out most of the flesh. In a bowl, mash potato flesh with sour cream, cream cheese, half the cheddar, and half the green onions. Season to taste.
  4. Spoon the creamy potato mixture back into the skins. Top with the seafood mixture, remaining cheese, and bacon bits. Return to the oven for 10-15 minutes until cheese is melted and golden.
  5. Garnish with remaining green onions, chives, and a dollop of sour cream. Add hot sauce if desired. Serve immediately.

Notes

  • For crispier skin, ensure potatoes are thoroughly dried before rubbing with oil and salt.
  • If you don’t have white wine, chicken broth can be used as a substitute.
  • Leftover potato flesh can be used in other dishes or mashed with the filling ingredients.
  • Adjust seasoning to your preference.
