Description

This microwave peanut butter fudge is a rich, creamy, and easy-to-make no-bake treat. It’s flavored with sweet peanut butter and comes together in minutes with pantry staples.


Ingredients

  • 8x8 inch baking pan
  • Parchment paper
  • 1 tablespoon water
  • 1/2 cup unsalted butter
  • 1 1/2 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • Optional red and green M&M’s for garnish

Instructions

  1. Line an 8×8 inch baking pan with parchment paper. Add 1 tablespoon of water under the parchment to help it stay in place.
  2. In a microwave-safe bowl, combine butter and peanut butter. Microwave for 60 seconds, then stir until smooth.
  3. Stir in vanilla extract.
  4. Sift in powdered sugar, one cup at a time, stirring well after each addition until smooth and lump-free.
  5. Pour the fudge mixture into the prepared pan and spread evenly with a spatula.
  6. Place a second sheet of parchment paper on top to smooth the surface.
  7. Refrigerate for about 2 hours until fully set.
  8. Remove the top parchment. Lightly score the surface for slicing.
  9. Lift the fudge out of the pan using the parchment overhang.
  10. Slice the fudge into squares using a sharp knife warmed under hot water.
  11. Press M&M’s into the top of each square if desired.

Notes

  • Different brands of peanut butter can subtly change the flavor and color of the fudge.
  • Maple syrup can be used instead of vanilla extract for a different flavor.
  • Mini chocolate chips or chopped peanuts can be sprinkled on top instead of M&M’s.
  • Granulated sugar can be used if powdered sugar is unavailable, but the texture will be slightly grainier.
  • Natural peanut butter should be avoided as oil separation can make the fudge greasy and affect setting.
  • Warming the knife under hot water before slicing helps create clean edges.
  • Sifting powdered sugar prevents lumps and ensures a smooth texture.
