A rich and creamy mint chocolate fudge cheesecake, perfect for any occasion. This no-bake dessert is easy to make and features a decadent chocolate fudge layer and a refreshing mint cheesecake filling.

- 1 ½ cups chocolate cookie crumbs
- ¼ cup melted butter
- 1 (8 ounce) package cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon peppermint extract
- 1 cup heavy cream
- 1 (4 ounce) package mint chocolate fudge, melted and slightly cooled
- ½ cup chocolate chips, for garnish
- Fresh mint leaves, for garnish
Instructions
- Combine chocolate cookie crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a bowl, beat cream cheese and sugar until smooth.
- Stir in peppermint extract.
- Whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
- Spread half of the mint chocolate fudge mixture over the cookie crust.
- Pour the cheesecake filling over the fudge layer.
- Chill for at least 4 hours, or until firm.
- Before serving, top with remaining mint chocolate fudge and chocolate chips. Garnish with fresh mint leaves.
Notes
- For a firmer cheesecake, you can add 1 ½ teaspoons of unflavored gelatin to the cream cheese mixture.
- Ensure the melted mint chocolate fudge is not too hot when adding it to the cheesecake layers.
