Description

A comforting and easy ground beef tater tot casserole topped with melted cheese, perfect for busy weeknights or family dinners. This ground beef tater tot casserole recipe is a crowd-pleaser.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (32 oz) frozen tater tots
  • Salt and pepper, to taste
  • Optional seasonings: garlic powder, paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef. Add diced onions and cook until soft.
  3. Season with salt, pepper, and optional seasonings. Drain excess fat.
  4. Stir in cream of mushroom soup and sour cream. Cook for 2-3 minutes until heated through.
  5. Grease a casserole dish and spread the beef mixture evenly.
  6. Sprinkle 1 cup of cheddar cheese over the beef mixture.
  7. Arrange frozen tater tots in a single layer on top.
  8. Bake for 25-30 minutes, until tater tots are golden and crispy.
  9. Remove from oven and top with the remaining 1 cup of cheddar cheese.
  10. Return to oven for 5 minutes, until cheese is melted and bubbly.
  11. Let cool for 5 minutes before serving.

Notes

  • For extra crispiness on tater tots, bake uncovered and consider a brief broil at the end.
  • Casserole can be assembled ahead and refrigerated up to 24 hours; bake an additional 10 minutes if cold.
  • Can be frozen before or after baking.
  • Cream of chicken or cheddar soup can be substituted for mushroom soup.
